Recipe: Superhero Chicken

We went to a friend's house one night and they made these amazing chicken thighs on the grill. I had never had any chicken so delicious. So I went home and figured out how to dupe it in my oven. My whole family absolutely loves it. I made it once or twice per week now.

Warning: If you don't like a lot of seasoning, don't make this. It is seriously a LOT of flavor!

The Recipe

Preheat your oven to 450°

Prepare the Seasoning

  • 2 Tbsp salt

  • 1½ tsp garlic powder

  • ¾ tsp onion powder

  • 1½ tsp coarse black pepper

  • ¾ tsp cumin

  • ⅜ tsp cayenne pepper

  • ⅜ tsp turmeric

  • ⅜ tsp sugar

  • 1 Tbsp chicken bouillon powder

Combine in a mixing bowl that’s large enough to dredge your chicken thighs in the bottom.

Prepare the Chicken

  • 8 - 10 boneless skinless chicken thighs (about 3 lbs)

  • 2 Tbsp olive oil

  • 3–4 drops liquid smoke

Drop the liquid smoke into the olive oil, mix, and brush your chicken thighs on both sides with the mixture.

Dredge both sides of the thighs in the seasoning, and place them on a baking rack over a sheet pan.

Bake @ 450° for 15 min, and then flip the thighs.

Bake 10 min more.

Cook to 185–190° internal temp.

Broil for 2.5 - 3 minutes on each side

Rest 5 min before serving.
